Dear Instant Pot,
I know this letter is getting to you a little late. I’m sure you have drawers full of letters just like mine. But you are so worthy of another one.
Instant Pot, where have you been all my life? Why did I wait so long to have you join me in the kitchen? You are the kitchen appliance I’ve been waiting for. With three kids and often little time to prepare for meals, you make life easy. You make life better.
For one, we’re a soup and chili family, and you, Instant Pot, make soup and chili your specialty. I used to think only my Crock Pot could make that perfect bowl of tenderness, but you, Instant Pot, have my Crock Pot collecting dust.
And you are fast. When I’m looking for perfectly tender vegetables in a broccoli cheddar soup, you pressure cook to perfection in four minutes. When I want quinoa ready to add to a greek salad, I only need one minute of your time before the quinoa is done and delectable.
Instant Pot, you had my heart from our first recipe together, a scrumptous Chana Masala. The chickpeas were perfect. The flavor was perfect. Instant Pot, everything was perfect.
From chicken pot pie filling to lentil soup, from rice and beans to vegan chili, you, Instant Pot, are the only one I need. I love how I only need to clean one pot after the meal is complete. I love how quickly you cook our meals. Instant Pot, what’s not to love?
Instant Pot, how did I live so long without you? I’m sorry that I didn’t find you sooner like everyone else. You now have a special place in my heart (and on our kitchen counter). I feel sorry for anyone who hasn’t experienced your pure amazingness for themselves. Their lives are just a little emptier than mine.
