Easy Snacks for Busy Moms – Three Recipes to Bring to Your Next Social Event

If your days are anything like mine – you might feel like you’re always rushing off to a PTA meeting, book club, play date, girls night in, or club meeting. These types of events are always popping up on my calendar, and I always love to bring something delicious to share. So I wanted to share three easy snacks for busy moms!

Problem is, I work full-time and have a young family which means I have zero time to prepare those elaborate and beautiful spreads I see all over Pinterest and Martha Stewart Magazines. 

But just because I don’t have a ton of time doesn’t mean I’m happy just picking up a bag of chips and a bottle of wine to share. I mean, don’t get me wrong, I love wine. And chips. But I also like to share something homemade. Or at least, partially homemade. 

So I came up with three easy snack recipes that have become my signature dishes.

I always seem to have these ingredients on hand and they fit in with a multitude of eating preferences (vegetarian, gluten-free, keto-friendly, nut free, etc). 

Easy Snacks for Busy Moms

Stuffed Mushrooms

This is so ridiculously easy that it doesn’t even really have a recipe. Take white mushrooms and clean and stem them. 

 

Pick up some crack dip, I mean, some Costco Artichoke and Spinach dip. (Side note: this stuff is SOO good. It’s delicious as is, cold, with a spoon. It’s also heavenly warmed up. I always have a tub of this stuff in my fridge.)

 

Fill each mushroom cap with a rounded spoonful of the artichoke dip, and sprinkle with a bit of grated parmesan cheese. Bake for 20-25 minutes at 350. Easiest recipe ever but looks elegant and tastes fancy!

 

Cranberry Scallion Dip

This is another super simple recipe that is always a crowd pleaser.  I know, I know – it sounds really odd, but this is truly delicious. It’s savory and sweet and is so good on some buttery club crackers. The recipe is easy to scale, so make as much or as little as you need.

For every one block of softened cream cheese, add 1/3 cup chopped scallions, and 1/3 cup dried cranberries. Mix together and let chill for 15-20 minutes to really let the flavors meld together. I like to sprinkle a few more dried cranberries and scallions on top to decorate. Serve with crackers.

 

Easy-Peasy Chocolate Mousse

I wanted to share a quick dessert recipe as well. This is easy to “whip” up and is so decadent and heavenly. 

This is a rich and creamy treat and it’s always a crowd favorite. It’s a little naughty but still so nice!  And takes just 5 minutes to create! 

Feel free to double or even triple this recipe as needed. Use my recipe as a starting point and feel free to adjust as needed. Take 1 cup whipping cream, 3 tablespoons of sugar, 1 tsp of real vanilla extract, and 3 tablespoons of cocoa powder. 

Start whipping the cream, and then slowly add in the rest of the ingredients. Taste and add more sugar or cocoa powder as needed. Be careful not to over – whip the mixture as it will turn into butter! (Although there is something so delicious about chocolate butter…right?!?)
