To help celebrate, I’m sharing some cute meal and snack ideas to help you and your little ones join in the fun! All of these options are easy and most of them your kids can help make!
I use any excuse I can to make fun food for Emily. Not only is it something that I personally enjoy, but I find it always make mealtime a little more enjoyable, don’t you? Dr. Seuss Day is the perfect opportunity for us to do some bonding in the kitchen, get a meal or snack on the table and have fun in the process!

Cat In The Hat Treats
I don’t know about your children, but my daughter loves both The Cat in the Hat TV show and books! This makes such a cute (and healthy!) snack to enjoy with either of these activities! All you have to do is thread sliced strawberries and bananas on a cake pop stick in alternating order. Super easy and aren’t they just adorable? Emily loves these and I’m sure your children will too!
Hop on Pop(corn)
This one is super easy! You can easily buy popcorn at the store, pop it in the microwave or even make it yourself on the stovetop! This is my favorite stovetop recipe. Finish it off with fun topping like sprinkles, butter, parmesan cheese or add extras like M&M’s, nuts and raisins for a fun trail mix option!
Green Eggs & Ham
This is an easy and healthy way to start the day. Even though the eggs aren’t entirely green, I wanted to find a way to keep it on the healthy side and not use food coloring. Just whisk about 1/4 cup chopped spinach into two eggs and scramble as usual. Serve with a side of ham for a quick and easy meal. Plus the recipe can easily be doubled or tripled for more children or even yourself!
One Fish, Two Fish
Okay, so this isn’t a recipe, but Goldfish Crackers are a fun snack to serve today while enjoying all things Dr. Seuss! We like the whole grain cheddar variety, but you can use any type you and your children prefer! If you want to add a little education component to this snack, you can practice counting the Goldfish or even use the colored version to work on colors!
Noodles for Poodles (from Fox in Sox)
Pasta salad is one of Emily’s favorite meals! I love how you can customize it according to what your child might like to eat and how it’s easy enough to make that the kids can help! I just cook some whole wheat pasta and cut up all the veggies and then Emily can dump them all in. Pour in your favorite salad dressing (We like Wishbone Robusto Italian dressing) and then stir it up. It makes for a fun activity as well as an easy and healthy meal!
Lorax Cookies
The Lorax was my favorite Dr. Seuss book when I was little and I know these cookies would have totally won me over! They’re cute and so easy to make. Simply take a Nutter Butter cookie and pipe on a little yellow frosting to look like his bushy mustache. For a DIY piping bag, just add some frosting to a small ziplock bag and cut off a small part of one of the corners. Finish these treats by adding two candy eyes “glued” on with more icing and you’re done!
