A great salad to enjoy yourself or make for parties and impress people š Your taste buds will thank you with the burst of basil, pine nuts and sweet ricotta.
Whipped Ricotta Salad
Whipped ricotta…
1 container whole milk or fat-free ricotta cheese. (If you can go to Whole Foods and get their fresh ricotta do. If not, use whatever your grocery store has.)
1 Tbsp extra virgin olive oil
1/8 tsp salt
Put all ingredients in food processor until smooth. Set aside.
Dressing
1 cup fresh basil leaves
2 Tbsp pine nuts toasted (optional: toast the pine nuts- I didn’t have time to do that and it turned out great.) You can also use any kind of nuts.
2 Tbsp white balsamic vinegar
1/2 tsp salt pepper to taste
3 Tbsp Olive oil
Salad:
1 cup cherry tomatoes or heirloom tomatoes
2-3 cups arugula or mixed greens
For the dressing: Place the basil, pine nuts, vinegar, salt and pepper in a food processor. With the motor running, drizzle in the olive oil to form a smooth dressing. Set aside.
Assemble: Spread the ricotta on the bottom of a platter or a small cutting board for a more rustic look. Dress the salad in a bowl and then place the dressed salad on top, leaving some of the edges of the cheese uncovered. Serve and enjoy!
