What’s your favorite summer treat? Mine happens to be ice cream!
While I’d love to indulge in a great big scoop daily, it’s not exactly the healthiest thing for me to have on a regular basis. Same goes for my three-year-old.
When I discovered “nice cream” it was like winning the dessert lottery! Have you heard about nice cream? It’s basically just pureed frozen bananas, but has the taste and consistency of soft-serve ice cream – honestly!
I know, I was a little doubtful before I tried it, but it’s SO good. My husband, who was a definite skeptic, loved it and kept asking, “It’s just bananas and milk?!?” Yep, just bananas and milk! My three-year-old inhales hers and always asks for more.
This recipe checks all of the boxes – Easy – Check! Quick – Check! Loved by all family members – Check! I’d say it’s a winner recipe, wouldn’t you?
It’s something I don’t mind having daily and feel good giving it to my toddler in place of ice cream. She can even help me make it, which makes it not only a fun treat but a fun activity too!
Also, the possibilities of add-ins are endless and can suit anyone’s tastes. I like to top mine with chopped nuts and Emily loves adding sprinkles! Feel free to top yours with whipped cream, nuts, fruit, chocolate chips and more!
Ingredients
3 Over Ripe Bananas, Peeled, Cut in 1/2 and frozen*
2-4 Tbs. Milk (I use 2%)
Directions:
1. Place the frozen bananas in a food processor. Process until pieces are tiny and crumbly, about 10-20 seconds.
2. With the food processor running, pour the milk through the hole at the top. Continue to process, adding more milk if desired, until it reaches soft-serve ice cream consistency, about another 30 seconds.
3. Enjoy and feel free to top with the ingredients mentioned above!
*When my bananas are starting to get too ripe, I peel them, cut them into 2-3 pieces and place them in a zip-lock bag in the freezer. This way I can easily pull out exactly what I need for this recipe on a moments notice.
